Baked Vanilla Cheesecake

  • 50g Slightly Salted Butter, melted
  • 250g digestive biscuits - crushed
  • 227g cottage cheese
  • 200g cream cheese
  • 125g Billington’s Golden Caster Sugar
  • 3 eggs – separated
  • 25g cornflour
  • ½ tsp Nielsen-Massey Vanilla Extract
  • Pyrex 26cm Non-Stick Springform Cake Tin
  • Kenwood Food processor
  • Heat the oven to 140°C (300°F Gas 2)
  • Mix the crushed biscuits with the melted butter and press into the base of the cake tin
  • Place the cheeses, sugar, egg yolks, corn flour and Vanilla Extract in the processor and pulse until fully blended
  • Whisk the egg whites until stiff and fold into the mixture
  • Pour onto the biscuit base and bake in the middle of the oven for 1 – 1½ hours
  • Leave to cool then carefully remove from the tin
  • Decorate with berries or fruit of your choice and serve
