Spring Onion Salsa
- 1 avocado, peeled and finely diced
- 3 bunches spring onions, peeled and finely sliced
- 1 green pepper, finely diced
- 2 green chillies, de-seeded and finely diced
- ½ cucumber, de-seeded and finely diced
- Juice of 1 lime
- Olive oil to coat ingredients
- Freshly milled sea salt and black pepper
- Place all of the vegetables into a bowl, and pour over enough olive oil to coat all ingredients.
- Add the lime juice and mix thoroughly.
- Season with salt and pepper as necessary.
- Place into Pyrex tapas bowl to serve.
