Microwave Steamed Lemon Maple Sponge

  • 150g Stork tub                        
  • 150g Golden caster sugar               
  • 2 x Eggs                                       
  • 1 x Lemon                                    
  • 150g Self-raising flour                    
  • 50ml Just-Milk                                     
  • 100ml Maple syrup                       

Kenwood Chef, Major or kMix with whisk and k-beater attachment.

  • Attach the K-Beater to the mixing bowl.
  • Place the Stork and sugar into the bowl and beat at a high speed for a minute until pale and fluffy.
  • Crack the eggs in one at a time as the machine mixes, including one tablespoon of flour with the second egg.
  • Zest the lemon into the bowl as well.
  • Turn the machine to its slowest setting and add the flour and milk to gentle mix in.
  • Pour the maple syrup into the bottom of a 1 pint microwaveable pudding basin and spoon the cake mixture on top.
  • Place the bowl into a microwave and cook on full power (800watts) for 5 minutes.
  • Leave to cool for 2 minutes, then turn out onto a plate and serve with cream or custard.
