50g Stork tub
5 tbs Baking powder
½ Lemon zest
- Food processor with main knife blade OR Kenwood Chef or kMix with K beater
Attach the K Beater to the stand mixer or the knife blade to the food processor.
Cut the butter (which must be cold) into small cubes.
Place the flour, baking powder, lemon zest, sugar and butter into the bowl
Switch to speed 2 and mix until the mixture resembles fine breadcrumbs.
With the machine running, add the butter milk and eggs.
Mix until they form a dough, but be careful not to overwork, then add the sultanas
Place the mixture onto a floured work surface and roll out to a thickness of 3 cm.
Dip a 6cm round pastry cutter in flour, then cut out the scones and turn them over onto a baking tray.
Allow to rest for 5 minutes, then brush the tops lightly with milk and bake in a preheated oven set at 220ºC/Fan 180 ºC/Gas 6.
Bake for 5 minutes then turn the temperature down to 180ºC/ Fan 160 ºC/Gas 4 and bake for a further 5 to 10 minutes.
Take out of the oven and rest on a cooling rack.
